Depending on the variety, we rehydrate anywhere between 1-7 days before pressing the piquette off to stainless steel tanks. Depending on our levels of alcohol, we will add a small percent of finished orange wine back into the piquette. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eTang is the people’s wine — Piquette began as a way to meet the needs of the people during the 1800s wine blight in France.
